Raw Vegan Truffles Recipe

These gorgeous truffles are rich and sweet but without refined sugars or milk solids. They make an excellent gift and pair perfectly with after-dinner coffee.

Ingredients:

  • ½ cup of sunflower seeds
  • ¾ cup of pecans or almonds
  • 1tsp of cinnamon
  • 6 medjool dates
  • 4 tbsp of carob powder
  1. Blend the seeds and nuts in a food processor until ground.
  2. Add the dates. Process again.
  3. Process remaining ingredients.
  4. Roll into balls.
  5. Coat in carob powder or coconut.
  6. Refrigerate overnight to firm.

The Immune Booster Smoothie

This smoothie is packed with immune stimulating vitamins A and C, antioxidants, plus anti-inflammatory and antimicrobial turmeric and ginger – excellent for fighting off viruses and infection. From its vibrant colour and zesty fresh flavour, you can tell it’s doing you good.

Ingredients:

  • 1 carrot
  • 2 peeled oranges
  • 1 thumb-sized piece of ginger
  • 3cm fresh turmeric or ½ tsp of turmeric spice
  • 100ml filtered water

New Year, New Start: January Detox

Come January many of us are ready to take a break from the indulgence that often goes hand in hand with the festive period. Having gained a few pounds, feeling a little lack luster and with New Years resolutions still fresh this is an ideal time to detox.

Detox is a term so carelessly thrown around it had begun to lose meaning. So What does detox actually mean?

Detoxification is a natural process where unwanted, potentially harmful substances are broken down and excreted via, sweat, bowel movements or urine. Your body is processing toxins all the time, and technically is perfectly capable of detoxing unassisted.

However in the modern world even living like a saint, it is hard to avoid the onslaught of toxins. When the body becomes overwhelmed with the level of toxins, they begin to accumulate and systems become compromised.

By assisting and stimulating the organs and systems associated with the detox process we reduce the stress on the body and aid the elimination of harmful toxic build up.

So what exactly is a toxin? Quite simply a toxin is an undesirable substance which hinders or harms physiological functions within our body, having a detrimental effect on our health. We carry within our bodies a chemical cocktail from alcohol and caffeine, pesticides, food additives, heavy metals, and residues of pharmaceutical drugs. The result of which may be: Lethargy, brain fog, depression, headaches, weight gain, acne, fertility problems, and decreased immune function to name a few.

Dr Caroline Longmore’s detox tips:

– Every morning have a cup of hot water and juice of one lemon to stimulate detoxification and digestion

– Drink 2 litres of filtered water a day

– Aim to eat 7-8 portions of fruit and vegetables a day

– Body brush every day before you shower

– Soak in Epsom salts to help draw out toxins through the skin

Mens Health

40% of men die prematurely. Why are we only just starting to discuss this phenomenon and what can we do about it?

Men are often reluctant to address or discuss their health. Research tells us that men often avoid seeking help until their health has deteriorated severely, by which point their condition may be untreatable. According to a survey by insurance firm Insureblue, one in five men has not seen a doctor in the past three years. Just scratch the surface of men’s health and you will discover some worrying statistics:

  • 1 in 2 men will be diagnosed with cancer
  • 1 in 36 men will die from prostate cancer 75% of premature deaths caused by heart disease are male

Smoothie of the month

RASPBERRY AND ALMOND SMOOTHIE (SERVES 2)

Rich in calcium and antioxidants.

Whizz in the blender:

  • 50 grs almonds
  • 150grs fresh raspberries
  • 1 banana
  • 1 fresh squeezed orange juice
  • 250ml milk (soya, almond…)

You can also try with mango and passion fruit, papaya and grapefruit, blueberries and orange, or strawberries and orange.

Recipe of the month

SALMON WITH CRUSHED NEW POTATOES, ROCKET AND LIME PESTO (SERVES 4)

Ingredients:

  • 800g new potatoes
  • 1 onion finely chopped
  • 2 tomatoes, deseeded and diced
  • 1 pepper red or yellow, finely chopped
  • some chervil (1 small bunch)
  • 2 tbsp. olive oil
  • 4 salmon thick steak

For the pesto:

  • 50g rocket
  • 50g pine nuts
  • 1 clove of garlic
  • 1 juice of a lime
  • 6 tbsp. olive oil

 

How to make it:

  1. Make the pesto and set aside in the fridge
  2. Place all the ingredients in the food processor and whizz until sick puree
  3. Place the potatoes in water and bring them to boil and simmer for 15 minutes until tender.

Then…

  1. Drain and crush gently, combine with the onion, tomatoes, pepper, chervil and olive oil.
  2. Divide into four plates.
  3. Preheat a pan add the salmon, skin side down.
  4. Season and cook over a medium heat for 3 to 4minutes on each side.
  5. Place the filet on the top of the potatoes and drizzle the pesto and serve.
