These gorgeous truffles are rich and sweet but without refined sugars or milk solids. They make an excellent gift and pair perfectly with after-dinner coffee.
- ½ cup of sunflower seeds
- ¾ cup of pecans or almonds
- 1tsp of cinnamon
- 6 medjool dates
- 4 tbsp of carob powder
- Blend the seeds and nuts in a food processor until ground.
- Add the dates. Process again.
- Process remaining ingredients.
- Roll into balls.
- Coat in carob powder or coconut.
- Refrigerate overnight to firm.
